Production Process of the natural Cacao Paste.
Cacao paste is made from organic Cacao beans that have been extracted from the pods, fermented naturally for 3-5 days in wooden containers ( reaching a temperature of about 50 degrees C ) and dried in the sun. Beans break into nibs before grinding. The friction of the grinding process raises the temperature of the nibs above the natural melting point of Cacao, 30-36o C, to produce a rich liquid. The raw liquid solidifies when cooled to produce this wonderful dark cacao paste. This raw Cacao paste is made from certified organic Cacao beans and contains no additives, the production has been molded into drops of equal size to make it easier to use in recipes.
