Recipes to make with chickpea flour :

Hummus with Chickpea Flour Recipe

Ingredients : for 8 people

  • 1 cup of organic chickpea flour (120 g)
  • 2 cups of water
  • 2 tablespoons of sesame seed puree Tahini
  • 2 cloves of garlic, pressed
  • 2 tablespoons of cold pressed olive oil
  • 2 tbsp lemon juice
  • 1/2 tsp of cumin powder
  • Salt and Espelette pepper

Cook the cup of chickpea flour in 2 cups of boiling water with the garlic and salt.
Mix well with a whisk for about 3 minutes.
Add a little water if necessary.
Add the cumin and sesame puree and mix well for 2 minutes.
Remove from the heat and add the lemon and oil. Mix well.
Present in a plate and decorate with olive oil and parsley.
Sprinkle with Espelette pepper.
And if you wish, you can also decorate with marinated olives.
It’s simple, healthy and delicious.

Falafel Recipe with Chickpea Flour

Ingredients :

  • 200 g Samskara chickpea flour
  • 2 tablespoons of spelt flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1/2 tsp of cumin powder
  • 1 tablespoon chopped parsley
  • 1 pinch of pepper
  • 1 tablespoon of olive oil
  • 170 ml of hot water
  • 3 tablespoons sesame seeds (optional)
  • 1 tsp of oil for the pan

Preparation :
Mix all dry ingredients together.
Pour oil and hot water over the mixture and stir well.
Let stand and swell for 10 minutes.
Preheat your pan and add the spoonful of oil over low heat.
By hand, form falafel balls with your mixture, roll the balls in the sesame seeds and brown in the pan. In order to let the inside cook well, cover the pan with a lid and make sure that the oil is not too hot.
Once golden brown, remove the falafels and drain on paper towels.
